Ingredients
- 4 large Yukon gold potatoes - peeled, diced, and cooked until tender; cooled
- 4 eggs - hard boiled, peeled, and diced
- 4 scallions - thinly sliced, white and green parts
- 1/2 C mayo
- 1 T yellow mustard
- 2 T dill pickle relish
- Salt and pepper to taste
- Whisk together mayo, mustard, and relish in bottom of bowl.
- Fold in potatoes, eggs, and scallions.
- Season with salt and pepper.
- Chill until ready to serve
